Daddy's Bonding Time

When Daddy gets home every evening...it is also my time to partially switch off.
More like on standby mode.
As long as Daddy is not tired, I leave the both of them to bond...
And I think such dedicated bonding time is essential and important for the bb to feel close to father. and for bb to see daddy as not just a playmate, but a caregiver...

and after dinner, I will volunteer to wash the plates, so that livingstone can spend time with his dotter. But I noe most of the time, he felt bad to have me washing up since I have alrd been doing the hse chores while at home, including preparing the dinner...so we ended up 'i wash la,', 'no need la, i wash la, u be with bb'.... haha

and after the nite shower, bbtara enjoys more bonding time with daddy, when daddy is in the mood for story telling....

how sweet. =)

Hari Raya Haji holiday, we decided to stay at home,
there was a craving for pizza, so wat are we waiting for???

I love to D-I-Y my own pizza, i can add lotsa ingredients that we like, and lotsa cheese!

and 2 huge bake drumstik to complete our meal!


heh heh.... bear with me....but it was yummilicious.... =)


We decided to watch for our movie mania at home. yesh, our cosy home =)
then, we made another decision to make our own popcorn while we enjoy the DVD.


yeah!

a holiday, lazing at home, D-I-Y-ing and making yummy decisions. =)

A gathering at Coris

We had this gathering planned for a while. Then there were pple who need to travel overseas, and there are pple with other commitment, and we had to postpone it until now.
The original objective was to celebrate my birthday wor.
Thanks so much to all of u, for making the effort, even though the date is 1 mth late....hur hur hur...=)


And so, to pamper them, i decided to prepare a simple lunch for them,
Menu:
Main Course - home-baked Pizza served with Cheese Fries and Baked Chicken Wings
Dessert - Mini Fruit Tarts
Drinks - What else? White Chrysanthemum Tea (Pokka) hee....

That morning, I woke up early to preapre the pizza dough.
after 2 hrs, the dough is ready for my shaping.

first pizza: Tomato sauce with chicken, ham, sausage, capsicum, mushroom and lotsa-cheese!!

2nd pizza: same ingredients but with bbq sauce.

this was the state before i covered the pizza with lotsa-cheese!!!

Happen to saw it in the supermarket, so i bought a pack, and put lotsa-cheese on top to bake. hur hur hur...

and i had to pamper them somemore wif these fruit tarts!

and the lovely babes decided to hand me a red packet! omigod, that was the least expected in this afternoon.

and u noe what? the choc cake that boon seng and jocelyn specially selected, was actually durian cake!

omigod, telepathy or wat? did i just mentioned that i was craving for durian? haha...
from Big O, this cake is amazingly divine!

We took off. clear some of my leave, and also to spend some time with my mom after her op.
Sista also took leave. that means ryan also pon-ten from child care. =)

We gathered at coris, and we B.A.K.E (d).
the other time i made kueh salat, and i used the wrong pandan juice. so this time, i tried again,
with yours truly grinding the pandan leaves, and squeezing the juice out of it.
so there you go, pandan juice, self-made. no need to buy.
fyi, 1 bottle of pandan juice is $21 from phoon huat.

after some steaming and cooking, we have the entire kueh done.

heh heh....
packed, and gave some to mabel who came up to give me my birthday present! (Thanks Mabel, Sean, Huiming and William!!)

also packed some for budd who is coming over later at nite.

Concurrently, we decided to bake some muffins, and ryan suggested m&m muffins.
so, there you are!
how easy is it to grant him his wish now!

when he woke up, sista carried him to see how the muffins are rising.

he asked for a muffin before we went for dinner.

i tell him to feed me, he say 'u take urself from there la'
we can really tell that he likes them!

After we sent them home, we hurried back to our neighbourhood to catch the procession of the 9th emperor. yah, if u rem, we were at the parade last year too. =)

This year, we had a new experience, we were standing real next to the mascots!!
heh heh...
last yr, we gong-gong waited by the big drain, for the mascots, lion dance and dragon dance, etc, to march to the finishing point. But, we are actually able to be up close and personal with them, right before they started marching! aiyoyo....



don see them short, when the pple goes into this mascot, it stands twice my height, at least.

by 11.30pm, budd had called to inform that she had reached our block, so we rushed back, in double quick time steps!

It was a nite we shared to bake some muffins meant for her birthday. =)


we made a variety of muffins! from nutella, to white & dark choc chips, to raisins! yummy!!

budd emptied the cup as she tasted one.... =)
nice or not nice? we leave it to u to imagine. art is subjective. =)


the session ended at 2am.


As I showered, and lay myself on the bed, i rx her sms,

"Budd, Thks for the muffins. They r really better gifts than any material stuffs though i know they r available fr u upon request...Hee...no lots liao, I have to park a few blocks away...Good night."

This is an entire quality day spent.... =)

Day: 1 bake, 1 steam:

so i decided to make bloody full use of my off day. =)
woke up early and went to hougang to get stuff ready for :
1) banana+walnut+choc chip cake
2) kueh salat
the batter
mix them ALL up for a nice smooth batter!!

next, the kuehs

had the glutinous rice steamed with pandan leaves...

the coconut mixture boiling...

and the end produce.
however, i used the wrong pandan juice, and i dun like the pandan taste, so i had the whole plate threw away. no kidding lo.
as u can tell from the picture, i dun even have the heart to cut the glutinous rice properly.... hee...
anyway, it was my good try, i will be doing it again soon. =)

Nite:
As we were making ourselves comfortable in front of the tv, watching our fav 10.30pm show - repeat telecast of <9-layered>, 'ding dong', someone was at the door.
(I had to then run in to change a short, as i was wearing too short a short to welcome any guest, hee...)
Dennis was at the door, with the kah lua i asked him to buy for me at DFS.
when i came out of my room, he goes "ahem, ahem!!"
i shouted, "that's a sign!" haha....and the dream team appeared outside our door singing the birthday song, and with sx holding the birthday cake. =)
(thanks guys!! u guys were so sweet!)
it was late. it was a weekday nite. i so thank you all for the effort.

and omigod, see wat gift they got for me!!

a set of 3kg plates! wea's the bar???

haha, beng has to come in with the bar, like monkey god! well done!!

it's a heavy 5kg bar, thanks so much to all, esp felin and sx who carried the heavy bar all the way from town to our home....love u so much!

Kueh Salat
Bottom layer:

400g glutinous rice
200ml thick coconut milk with 100ml water
2-3 pandan leaves
some blue food colouring (optional)
a pinch of salt

Top layer:
6 eggs
800 ml thick coconut milk
200g rice flour
320g sugar
50 ml pandan juice
some green food colouring
a pinch of salt

Method:
Bottom Layer:

1. Soak glutinous rice for 2-3 hours. Drain.
2. Steam the rice on pandan leaves with a pinch of salt for 15-20 minutes or till tender.
3. Remove from heat and add in coconut milk. Mix well with a wooden chopstick.
4. Then sprinkle some blue food colouring all over the rice (optional).
3. Transfer back to heat and steam for 10 minutes further or till cooked.
4. Lay a banana leaf on the bottom of an 8 inch square tray. Place steamed rice in the tray and press down firmly with a banana leaf on top to compact it.
5. Return to steamer and steam for another 5 minutes.

The bottom layer has to be hot when the top layer is poured on.

Top Layer:
1. Beat eggs in a mixing bowl lightly with a fork. Mix in the rice flour.
2. Cook coconut milk, pandan juice, sugar, salt and green food colouring over low heat. Keep stirring and add in the egg mixture. Stir continuously over low heat, until mixture thickens.
3. Pour the yellow mixture over the steamed glutinous rice in the steamer slowly. Steam for 15-20 minutes or until set
4. Cool the kueh before cutting.

*Note, i didn't have banana leaves, so I used normal grease proof paper instead. works fine.

Banana Bread:

Ingredients:

You will need
500 g riper bananas, mashed up

120 g soft butter
85 g sugar

85 g brown sugar
2 beaten eggs
2 Tbsp condensed milk
220 g self-raising flour
65 g walnuts
70 g chocolate chips

Method:


Set the oven to 180 degrees centigrade

Blend the ingredients
Using your spatula spoon the butter into the mixer bowl, follow with the brown sugar, white sugar, then lower the whisk attachment into the bowl and blend on medium speed for a few minutes. Then slow down the speed and slowly add in the eggs, the mashed bananas, the condensed milk and slowly begin to add the flour, shaking it in little by little then add in the chocolate chips and finally the walnuts.

Then switch off the blender, using your spatula give it one final quick mix by hand.
Transfer to the baking tin
Place the baking tin into the centre of the preheated oven and bake for roughly 55-60 minutes. You can check to see if it's ready by piercing into the centre of the cake with a skewer. It should come out dry and if so, remove from the oven.

*i didnt want it too sweet, so i did not add in the 85g sugar, and only used brown sugar.
taste good too!
